My friend Audrey is a talented craftswoman that creates charming home goods as well as delectable homemade dishes. She makes the best sandwiches, too!
This past weekend she invited me to her kitchen (isn’t her kitch the cutest?!) to witness her process of cooking Genoese Pesto Minestrone. Little did I know that this ideal fall soup required a lot more time than I initially expected. Just to chop all the vegetables alone took a whole hour! By the time we devoured the finished product about three hours had passed. It was definitely well worth the wait.
She serves a bowl of soup with a bit of pasta, a dollop of pesto sauce and sprinkles parmesan on the top.
